Baked Oatmeal – SimpleFrugal style!
I am not sure who shared this recipe with me but I remember thinking, where has this been all my life?
I had been cooking for my family for 15 years before this one came along. It is called Baked Oatmeal. Some have called it Breakfast Cake.
Call it what you want, it is sure to be a regular in any frugal home. At our house it is never the same – see variations in the Notes. One variation got its own post! See Chocolate Chip Breakfast Cake
Though the original recipe calls for eggs, this responds well to substitutes!!
We fix this on Sundays or any day we want a hearty breakfast. I might add sausages or bacon, too.
Baked Oatmeal – SimpleFrugal style!
Serves: 12+
Total time: 1 hour+
Ingredients
- 9 cups rolled oats
- 4 teaspoons cinnamon
- 2 teaspoons sea salt
- 2 tablespoons baking powder
- 3 cups milk or water
- 6 eggs (or egg substitute)
- 1/2 to 1 cup honey
- 1/2 to 3/4 cup oil or melted butter
Instructions
- In a large bowl, stir together all dry ingredients.
- In a Vitamix or separate bowl, blend together all liquids.
- Stir the liquids into the dry ingredients.
- Pour this into a greased 13 x 9 inch baking pan. OR my new favorite is to measure 1/2 cup into each muffin top
- Bake for 45-55 minutes
